Unlike its cousin, the agave, Sotol is crafted from the Dasylirion Wheeleri, a flowering plant that belongs to the Asparagus family. This unassuming desert dweller, with its slender leaves and towering flower stalks, holds within it the secret to Sotol’s unique flavor profile. Bienvenido, a fourth-generation Sotolero, learned the trade secrets from his father and grandfather, who operated a clandestine mobile distillery during the dark days of prohibition.
